The “Good and Good for You” Challenge

The National Pork Board is hosting a “Good and Good for you Challenge” to help inspired healthy diets and lifestyles in the New Year. The National Pork Board is asking people to take a pledge to eat healthy in 2012. To help kick start the effort, the “Good and Good for You Challenge” will take place over a four week period from Jan 26- Feb 22nd.

 

Here on MomDot we are going to be taking that challenge and testing out a new recipe every week with different cuts of pork. From tenderloin to chops, we encourage you to participate along side and hopefully find some new family recipes.

This week we tested out tenderloin, a favorite of my own household. Now generally I put in the oven, but this recipe called for slicing up the pork, pan frying, and adding some lemon sauce to the mix. Pairing up with a side of healthy vegis and some whole wheat pastas and you have a fun and healthy meal for the entire family.

Sauteed Pork Tenderloin Medallions w/ Lemon-Garlic Sauce

  • 1 pork tenderloin
  • 1/4th tsp salt
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 2 clovers garlic
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1 tbls lemon zest
  • 1 tbls fresh parsley

Directions: Cut pork into slices, seasoning with salt and pepper and fry up in a skillet over med-high heat. Make sure pork reaches a temp of 145 degree and are browned up on both sides. Once cooked, remove pork and put on serving dish.

Add remaining tsp oil and garlic, and once heated up, add wine and broth. Increase temp to high, stirring until liquid is reduced by 2/3rds.

Remove skillet from heat and stir in remaining salt, pepper, lemon, and parsley. Serve medallions with the sauce over the top.

My tips:

Personally, I felt this recipe was a tad bland. I would remove the salt, reduce the wine to 1/3rd cup, add  a tsp of cornstarch for thickening, a tbls of butter, sprinkle of basil, and maybe some capers.  I think the original recipe would be great for kids, but personally I like more of a “kick”.

    This is one of the recipes I wanted to try. I LOVE the idea of adding capers. My three year old loves capers, its so funny we go out to restaurants and ask for an extra side of capers for her!

  4. We love pork and this sounds really good… I like your recipe better than the original, but would have kept the original amount of wine. =)

  5. I absolutely LOVE pork! I love all white meat but have a harder time with dark meats. That recipe sounds really good!!!

    I’m looking forward to this series. Pork is one of my favorite meats and I’m always on the lookout for new ways to prepare it. I love the tenderloin – it’s my favorite cut – and I’ve been cooking a nice one once a week or so in the oven on a low heat for 5-6 hours. It falls apart and makes the most wonderful gravy; delicious with fresh mashed potatoes or rice.

    Even better – I just found whole tenderloins on sale for 2.99 a pound – wow – and stocked up. I definitely think pork is a great buy for my money.

    I love the occasional steak but honestly we don’t eat a lot of beef in our house. Pork and Chicken are my favorites and since I cook that’s what I use lol. This sounds interesting though I will have to try this thanks!

    We dont eat a lot of pork, but we do eat pork. I made medalions this week. I made pork chops for the first time just a few months ago andthe girls liked it so we have been eating a little bit of pork since then.

    Yes, we eat a LOT of pork. I’ve got a pellet grill/smoker, and end up doing pulled pork a few times a month, tenderloin or chops pretty much every week. If you google ‘Asian Pork Tenderloin’, there is a Junior League recipe that is to die for!
