Spicy Jalapeño Mexican Wontons Recipe

Last year I had the pleasure of working with PHILADELPHIA Cream Cheese and some of its related products. It was a ton of fun to use in recipes and share with everyone here. So this year when Kraft asked me to test out the Spicy Jalapeño cream cheese spread I was very curious to try.

See overall I am not a Jalapeño person. I like spicy and I like bit of Jalapeño cut up in my salsa, but since this was a test, I was very up to the challenge. I make my daughter try her food at least once, so in the spirit of the same precedence, I took on the challenge.

A little about PHILADELPHIA Cream Cheese:

PHILADELPHIA Cream Cheese has been making America’s favorite cream cheese since 1872. Due the high standards and commitment to a quality product, they use fresh milk and wholesome cream. Fresh milk from nearly farms is made into cream cheese and goes from farm to ridge in only 6 days. In the PHILADELPHIA cream cheese spread I tried, they use crisp jalapenos to provide its delicious taste.

Spicy Jalapeno Wonton Recipe

Now initially when I tried the spread, as a non Jalapeño girl, I was like WOAH. It is spicy. Like it knocked my socks off, but the flavor was good so I knew that I could make this into a recipe easy. When you are recipe developing its so challenging. After all, I am not a cooking blogger, I am a just a cooking mom.

And a mom that stands in the kitchen and often stares into my fridge with the “what am I gonna cook” stare at that.

Initially I had this thought process to tame down the spicy and do something with it sweet. I tested out all sorts of pumpkin and strawberry kicks but didn’t ever quite get there. (which explains the picture above) However when I embraced the spicy, I found the PERFECT marriage for it and I hope you enjoy as well.

Spicy Jalapeño Mexican Wontons

  • 1 container of Spicy Jalapeño Cream Cheese Spread by PHILADELPHIA
  • 1 package of wonton wrappers (find these in the fresh vegi aisles)
  • 1 package of cheese
  • 1 can of black beans

Extras: Sour cream for dipping, salsa for dipping

Instructions

1) Empty container of Spicy Jalapeño Cream Cheese Spread into a bowl and 1 cup of black beans from a can. Mix with a fork. Do not overmix.

2) Add 2 cups of shredded cheese, pick your favorite flavor! Mix  with a fork.

3) Lay out wonton wrappers and put spoon full inside and seal. Wontons can be tricky to seal. You fold in a triangle and then grab either end and bend together.

or you can seal like a triangle and leave it there. If you are dipping, I would go with the triangle method. Make sure you brush your wonton wrappers with egg whites around the edges before frying up. Follow wonton wrapper instructions for frying in pan.

4) Remove from heat and serve up immediately with a bowl of sour cream, salsa, or extra black beans!

Red Velvet Cookie Recipe

There is nothing more guilty than taking a boxed cake and whipping up a quick dessert.

Raising hand.

I am such a guilty mom today.

Charlotte was home from school because of sun stroke (we spent way too much time at the water park yesterday) and it left me with two kids to entertain instead of one.

I swear when you get used to your older child going to school and they are home, you just about lose it trying to figure out how to keep them busy. I am sure going to have a looong summer.

After 9 rounds of paper airplane making and throwing, 2 rounds of Life on the iPad and a walk, Charlotte asked if we could bake a cake. However when I pulled out the Red Velvet cake I noticed a few recipes on the side. I looked them over and decided…why not?

What I didn’t expect was that these Red Velvet crinkle cookies would pretty much revolutionize the way Red Velvet cake tastes and I will continue making these as long as I shall live. I ate four today if I am being honest. The cookies were a chewy but cake-like consistency and once baked turned into an adorable sugar coated piece of yumminess.

I highly suggest, especially if you are a red velvet fan and have a box in your pantry waiting to be made, that you test this out before making another boring traditional cake.

Our Red Velvet Cookies

Red Velvet Cookies (crinkled)
Recipe Type: dessert

Red Velvet cookies crinkled with powdered sugar for a chewy cookie with the red velvet flavor
Ingredients
  • 6 tablespoons butter
  • 1 cup powdered sugar
  • 1 teaspoon cornstarch
  • 1 box Red Velvet Cake Mix
  • 2 large eggs
  • 1 teaspoon lemon zest
Instructions
  1. Preheat oven to 375°F. Melt butter; set aside to cool. Place powdered sugar and cornstarch in shallow dish. Mix with a fork to blend.
  2. Place mix, butter, eggs and lemon zest in large mixing bowl. Mix by hand until well blended and turns into a cookie dough consistency.This is super messy
  3. Form dough balls and roll in powdered sugar. Place on ungreased baking sheet.
  4. Bake in oven for 9 to 11 minutes or until set. Cool 1 minute. Transfer to wire rack to cool completely.

I used 1tbls of lemon juice over the lemon zest

I had really good intentions.

I got this!

Promising.

So I let them cool.

All the way this time.

I even asked for advice on facebook how to level them nicely for frosting.

I put on my serious baking hat.

Then I frosted them.

Cherry.

Lemon.

Cherry.

Then I cut a piece.

And this is what happened.

 

Then I walked out of the kitchen and came back to more of this….

Tie Dye Fruity Cupcakes

I always preempt my baking posts by telling you that I am the worst baker ever. This way, if something happens to suck, you wont come after me for it.

That being said I don’t really need a disclaimer tonight because this recipe:

a) did not suck

b) cannot be screwed up

c) is easy and very kid friendly

I originally saw this fun recipe in the Cooking Light magazine as an advertisement for Jello, but have since also seen it on the side of the white cake box (without the brand name Jello)..so I am unsure who owns this recipe. Either way, its not me, but here are the results and how you too can have a tasty flavor filled yummiliciuos cupcake 30 minutes from now.

Original recipe Ingredients:

  • 1 pkg white cake mix
  • 1/4 cup JELLO Lemon Flavor Gelatin
  • 1/4 cup Lime Flavor Gelatin
  • 1/4 cup Strawberry Flavor Gelatin
  • 1 can vanilla frosting

We actually used Lime, Raspberry, and Orange.

We are rebels.

Prep:

  • Prepare cake batter as on package; eggs, oil, all that jazz.
  • Split into three bowls evenly.
  • Stir different gelatin in each bowl (please note, we ended up using the entire package of the orange because the color wasn’t bright enough for me) and then put a 2tbsp of batter colors in a paper lined muffin cup, alternating colors/flavors as you go.
  • bake as directed on cake box. Frost when cool.

 

And a visual prep…

I may have snuck one before dinner tonight…honestly, they are so good they really don’t even need the frosting.

Creamy Chicken Florentine Recipe

As busy moms we are always looking for new ways to spice up old favorites or quick recipes for hectic schedules. I prefer to make a ton from scratch, but when it comes to spices I dont always know the way to mix and match with a perfect blend….of…well, perfection! I am a taste tester, meaning that when I cook, I cook as I go and sometimes that ends up with a burned pan or too much pepper or not enough cayenne. So when I can simplify those flavors and add a little help, it makes me happy!

What You Need:

- 1lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1/2 cup halved red pepper strips
- 1 tub (10 oz.) PHILADELPHIA Savory Garlic Cooking Creme
- 1 pkg. (6 oz.) baby spinach leaves
- 2 cups hot cooked penne pasta
- 2 Tbsp. toasted Italian pine nuts

How To Make It:

COOK chicken and peppers in large nonstick skillet on medium heat 5 to 6 min. or until chicken is done.

ADD cooking creme; cook and stir 3 min.

STIR in spinach and pasta; top with nuts.

 

EASY EASY EASY! And regardless of being a working mom, stay at home mom, heck you don’t even have to be a mom, if you have to cook at night at ALL, the Philidephia Cooking Creme lends for some great options to fill up your plate (and get seconds).

Chocolate Dipped Waffles

As if waffles could not be any better when smothered in butter, syrup, peanut butter, or any number of combinations, here is a totally fun idea to get a slumber party or birthday party started off right.

Or Breakfast.

Chocolate isn’t so bad for breakfast…right??

At any rate, these waffles are super easy to create and make a fantastic snack for a round of kids…or an adult that wants to feel like a kid.

Chocolate Dipped Waffles

(inspired by Taste of Home Cookbook)

  • 1/2 cup semisweet chocolate chips
  • 1/4cup butterscotch chips
  • 1/2 tsp shortening
  • 4 frozen waffles, toasted crisply
  • Sprinkles

Directions: Melt chips and shortening, stir until smooth. Cut each waffles into four wedges and dip point of each into the chocolate. Place on wax paper and garnish with sprinkles. Refrigerate until set.

Result?

Winner, Winner, Chocolate Dinner!

To make these more geared towards a holiday breakfast surprise, just grab some colored melts at the store and dip in Pink and White for Valentines Day, Blue and Purple for Easter, or Red, White, and Blue for the 4th of July!

We happened to have Chocolate chips and Valentines Day Sprinkles on hand, but there are numerous possibilities. And since the entire snack took under 15 minutes to create, you have plenty of time to mix it up.

Chicken and Waffles..OMGee!

I came across this fantastic looking sandwich the other day in some random magazine. I normally do not stop on sandwiches, but it was chicken in the middle of WAFFLES and it made me look twice.

I knew it was something I had to try. Not only for me, but for Charlotte, who happens to be picky a la picky.

What I found was that it was mega tasty so I wanted to pass on the recipe for those who wanted to try something new. I wish I could quote the magazine for credit but my memory is about the size of a pea so I don’t remember.

(my actual dinner)

Chicken and Waffle Sandwich

  • 3tblsp mayo ( I use Hellmans)
  • 1tblsp buttermilk
  • 1tsp cider vinegar
  • 1/4 tsp sugar
  • 1/4 tsp garlic powder
  • 1/8th tsp black pepper
  • 2 pieces of frozen waffles….or if you are adventurous I suppose you could make your own. I used the Eggo whole grain. Toast them first. Obviously.
  • Anything you like on sandwiches..I used tomato, lettuce, cheese, and avocado
  • Chicken or Turkey slices from deli  (I used Turkey)
  • *you can also add bacon, etc

1) Combine Mayo and all other ingredients (garlic, pepper, sugar, vinegar, buttermilk)

2) Assemble sandwich by spreading mayo mixture on waffles, add turkey or chicken and all your fixins.

Yes. I say fixins.

3) Eat and sigh

Honestly, this was the easiest sandwich ever and the wholegrain waffles were perfect and crunchy. The mayo was slightly tangy and slightly sweet. Charlotte loved the novelty of waffles as part of her sandwich.

It was win/win all the way around and only took about 5 minutes to prep this fun dinner!
