Happy Thursday! This weeks theme is COOKIES! The Holidays are the perfect time for baking. With the temperature dropping there is nothing better than being in my kitchen whipping up a batch of fresh cookies. Here are some recipes that are sure to get the “Mmmmm” factor from the family!

Peanut butter Cookies (Recipe Courtesy of Momma Cooks Cooking)
-1 egg
-1 cup sugar
-1 cup smooth or crunchy peanut butter

1) Heat the oven to 350.
2) mix all ingredients with a wooden spoon.
3) Drop by spoonfuls onto an ungreased cookie sheet and flatten with a fork.
4) Bake for 8-10 minutes.
Yields 2-3 Dozen.

Christmas Sugar cookies with butter frosting (Recipe Courtesy of Momma Cooks Cooking)

-1-3c Sugar
-2/4c Shortening
-2 Eggs
-1tsp Vanilla
-2.5c Flour
-1tsp Baking Soda
-1tsp Salt
-Holiday cookie Cutters

Mix all ingredients together until moist and bake @ 400 degrees for 6 to 8 minutes

Butter frosting:
-3c powdered sugar
-1/3c soft butter
-.5tsp vanilla
-2tbsp milk
-food coloring

Mix all ingredients together (Following instructions on box for the food coloring) You can see Jessica’s Halloween version of these cookies here!

Candy Cane cookies (YUM these were my FAVORITE cookies to make as a kiddo!)

-2/3c butter or margarine, softened
-1c sugar
-2 eggs
-2tsp vanilla extract
-1tsp almond extract
-3c all-purpose flour
-1tsp baking powder
-1/2tsp red food coloring

1) Cream butter and sugar in large bowl with electric mixer at medium speed. Beat in eggs, vanilla and almond extract.
2) Meanwhile, in a small bowl, combine flour and baking powder; stir into creamed butter and sugar mixture. When well combined, divide dough in half; tint one half with food coloring. Wrap each piece of dough and refrigerate at least 2 hours.
3) Preheat oven to 350 degrees.
4) Divide each portion of dough into 32 pieces. Roll each piece into a 5-inch rope. Twist 1 red and 1 white rope together and bend the end to form a candy cane shape. Place on ungreased baking sheet.
5)Bake for 8 to 10 minutes or until set and lightly golden. Remove from sheet; cool on wire racks.

(TIP: For a fun twist on these add a dash of peppermint extract and top with crushed peppermint candies!)

Snow-Cap Cookies

-1 3/4c all-purpose flour
-1c finely chopped pecans
-3/4c butter, softened
-1/2c powdered sugar
-1.5tsp water
-1tsp vanilla extract
-1/4tsp salt
-1/2c chocolate chips
-1tsp shortening
-Sweetened flaked coconut

1) Preheat oven to 350 degrees
2) Combine flour and pecans; set aside.
3) In a large bowl, cream butter and sugar with an electric mixer until light and fluffy; beat in water, vanilla and salt and mix well.
4) Stir in the flour mixture and blend well.
5) Shape dough into 1in balls and place on ungreased baking sheets.
6) Bake 20 minutes or until edges are golden brown. Cool on wire racks.
7) Microwave semisweet chocolate chips and shortening in a microwaveable bowl on HIGH for about 1 minute, stir until smooth.
8 ) Dip each cookie in chocolate than sprinkle with coconut.

Thanksgiving pumpkin cookies

-2 3/4 c all-purpose flour
-1 tbsp baking powder
-1/2 tsp salt
-1 tsp ground cinnamon
-1/2 tsp ground nutmeg
-1/4 tsp ground ginger
-1/2c butter
-1.5c packed brown sugar
-2 eggs
-1 3/4c canned pumpkin
-1c chopped nuts

1) preheat pven to 375 degrees and lightly grease baking sheets
2)Combine flour, baking powder, salt, cinnamon, nutmeg and ginger together in a medium bowl and set aside
3)With electric mixer, cream butter and sugar. Add eggs; blend well. Stir in flour mixture to creamed mixture alternately with the pumpkin. Stir in nuts.
4)Drop by spoonfuls on prepared baking sheets. Bake for 15 minutes or until browned on edges.
5)Transfer to wire racks to cool. (is important bc the cookies will burn without this step!)

    MMMMM.. they all sound so yummy!! We always have a cookie swap for the neighborhood kids, I’ll have to keep these recipes in mind!

    Thanks for the great cookie recipes. Cookies are about the only dessert that I mess with. Otherwise I buy them already made. :)

    whenever im out of my baking necessities(sp??) i usually making that same peanut butter recipe, so easy! and its good!

    im going to try out those candy cane cookierecipes soon!

    I don’t have a cookie recipe that I know of off-hand but I do love Mexican Wedding Cakes! One day I will post that recipe if I find it. Love your recipes they seem really simple and fun to make with the kiddies.
