Its funny because I always thought that if I went to Mexico I would get the best Mexican food of my life. I was all geared up to stay on an all inclusive, which included food, to eat my hearts desire in salsa and sour cream till I threw up and I can tell you only ONCE did I have Mexican food.
Once.
Uno.
Really.
Hamburgers, steak, salad, pork…check, check, check, check.
Banana, Papaya, Kiwi, Strawberries…check again on all four.
No Mexican in sight. Well, there were Mexicans in sight, but no Mexican.
Unless you count the Cancun airport where for 3 tacos and a small drink you can fork over $17 for a fast food version. Blah.
Another thing I missed something terrible was pasta. Oh man, I love pasta. It’s not an “every day” food, but when its for dinner, IT’S FOR DINNER. I can pretty much incapacitate my entire family with this type of meal. It was the first meal I made Wednesday night when I got home from vacation. You probably thought I was gonna say I made Mexican. Don’t worry, thats on the agenda this week also.
And I was so lucky to come home to my green peppers all gussied up on the back porch into the perfect size to cut, chop, and add to some sauce!

They about quadrupled in size by the time I got home.
I am pretty sure Charlotte was stuffing the vegis full of steroids cause this is what my cilantro looked like before I left:
And when I got home 8 days later it had taken on some sort of tree formation:
Now when I make spaghetti, I like to get ordinary garden sauce by Ragu and then add stuff to it. So ill start with a pound of hamburger meat, add chopped onions, cut up garlic, and fresh green pepper and saute it all together in a pan. Then once that is done and drained of any fat that might be extra, I add in the plain sauce and create my own Italian dinner just the way I like it.
I also boiled up some fresh off the husk corn and some butter biscuits.
You know, so we could have starch, starch, and starch for dinner.
What? Spare me the lecture on health food.
I’m pregnant.

That’s it! I am moving SOUTH. Here in Kansas it has been so stinkin’ cold that my plants are seriously stunted. My cilantro is stuck at baby stage. It looks nothing like yours, it has like 3 stems at maybe 6 inches tall. I thought it was “full grown.” Nope. And my pepper plants aren’t even budding yet.
Hoping that in a month I will have some veggies to take picture of LOL
What’s the deal with the cilantro? Mine was all nice and leafy, then I cut it and when it grew back, it grew into the crazy tree formation like you have! Now it’s all frond-y.
Wow! Look how much those veggies grew!! So neat and fun to cook with home grown veggies. This year I planted a tiny garden with the kids. I don’t think it will produce much as our weather is SO RAINY and NO sun, OMG. And funny you could not find any Mexican food, that is weird!
I can’t believe you weren’t surrounded by Mexican culinary choices on your trip! It looks like your home-grown delicacies were ready and waiting for you, though! I always use Ragu and spice it up with my own meat and spices, too.

That is so funny you couldn’t find mexican food because when we went to Jamaica all we could find was Jamaican food which was not good for a pregnant woman with killer heartburn. By the time I got home all I wanted was an american hamburger (made with BEEF) and french fries.
And OMG your peppers are sooooo cute! Mine are just tiny buds right now. This damn cold weather. You’ll have to tell me what you’re doing with your cilantro because mine just went insane and grew bigger than every other herb in the garden. I don’t know what to do with all of it.
Pico!!! I have been using it to make pico, but every time i cut it, it gets HUGE. My basil is a small tree too. I dont know what happened but the herbs are insane.
I probably have about 25 tomato on my tomato plant too. They are all still green, ill update when they get red.
I had the queso dip at the one restaurant, and at Selvetica they had refried beans. Otherwise, yeah I sort of missed the Mexican food. I want a taco dammit.
