Pot O’ Gold Brownie Cups for St. Patrick’s Day

Do you remember when you first learned about leprechauns or pots of gold at the end of a rainbow? I was thinking about it just the other day. I can’t recall when I was first told about them, it seems like it was something I always knew.

Every time I saw a rainbow as a child I remember straining so hard trying to find where the end landed and then trying to estimate how long it might take to get there (whether that was walking, driving, or maybe even sailing).

It always seemed like such a magical thing, to find a pot of gold at the end of a rainbow. I know I dreamed about being one of the people to actually find it.

The funny thing is, as a kid, I don’t remember ever having a plan of what I would do with that gold. I just wanted to actually find it! I think I was pretty happy with my life and figured I had everything I needed.

My how times have changed!

Ok, that sounded bad. Honestly, I’m really happy with my life and I know that I have everything I need, the things that really matter and count anyway. But there are definitely things (bills, cough cough) that a pot of gold could certainly help with now! Am I right?

Since I’m still searching for that elusive pot of gold, I’ll settle for something almost just as good and I’m going to share it with you right now!

Pot O’ Gold Brownies!

These things should get a gold medal for not only taste but for FUN! I mean, you can’t go wrong with the green frosting for St. Patrick’s day and you are going to love that there is gold hidden inside these brownie cups.

So let me stop rambling and let’s get to baking!

Pot O’ Gold Brownie Cups

Ingredients

  • Brownie Mix
  • Water bottle
  • Green Frosting
  • Gold Sprinkles

First, whip up a batch of brownie batter. You can do homemade or a box mix.

Second, instead of putting them in a pan, pour the batter equally into a cupcake tin.

Third, bake according to directions (if it’s a homemade recipe you may need to adjust time or temperature so as not to burn the brownie cups).

Fourth, let them cool slightly, then remove from the tin and place them on a cooling rack to finish cooling.

Next, you need to make an indentation in your brownie cups where the surprise gold will go. We found using the top part of a water bottle (with the lid on) worked perfectly!

Then, fill in the indentations with your gold sprinkles. You should be able to get a lot of sprinkles in there!

Next, time to decorate your Pot O’ Gold Brownie Cups!

Use the can of green icing to cover the gold and the rest of the brownie. We liked using a spray can. It was easy and made cute designs on top. But you could just use a regular premade can of frosting or homemade for that matter and spread it with a knife. 

Finally, you can add just a hint of sprinkles on top to make it look even better and give a hint of the good stuff to come.

Look what happens when you check out the inside! Is that not just plain ol’ fun??? If I get this giddy about them just imagine how kids will react. You’ll be the life of any party if you show up with these cute things in tow.
