Reese's Peanut Butter Chocolate Cupcakes

What You Need
Cupcakes
  • 1 pkg. Chocolate cake mix
  • 1 1/4 cup water
  • 1/2 cup peanut butter
  • 1/3 cup oil
  • 3 large eggs
  • 24 mini Reese's peanut butter cups
Peanut Butter Frosting
  • 8 oz. cream cheese
  • 4 Tbsp. butter
  • 1/2 cup peanut butter
  • 3 1/4 cup powdered sugar
  • 1 cup whipped topping
Instructions
  1. In a large mixing bowl, combine cake mix, water, peanut butter, oil and eggs.  

  2. Beat on low for 30 seconds, and then on medium for an addition 2 minutes.

  3. Fill paper cups half-full.  Place a Reese's peanut butter cup in the center of each batter-filled cup.  Top with an additional 1 Tbsp. batter, making sure to cover the entire peanut butter cup.

  4. Bake at 350 degrees Fahrenheit for 18-22 minutes.


  5. Cool in pan for 10 minutes before removing from muffin tin to wire cooling rack, where they'll cool completely before frosting.
