These Pepperoni Pizza Rolls are a perfect, cheesy dinner recipe that you can make any night of the week! This recipe makes 24 pizza rolls -- ideal for a family of 2 (with leftovers) to 4 for dinner. Halve the recipe to make 12 pizza rolls.
Move oven rack to the middle of the oven. Then preheat to 375 degrees Fahrenheit. Spray your 12-cup muffin tin(s) with nonstick spray.
Flatten each 1-pound dough ball into a rectangle and divide into 12 equal portions. (If you have two 1-pound dough balls, you'll end up with 24 equal-sized portions of dough). We recommend cutting the dough vertically 6 times and then cutting each strip in half.
Roll dough into balls and then flatten with your fingers into 4-inch rounds.
Scoop 1/2 teaspoon of pizza/marinara sauce into the center of each dough round (without spreading sauce). Top sauce with 1 piece of mozzarella and 2 small pepperonis. Fold each corner of the dough up and pinch together to form a closed ball of dough around the ingredients inside.
Combine salt, melted butter, and garlic powder in a bowl and dip each pizza roll into the bowl, coating it with the marinade. Coat one at a time and place the dough ball seam-side down into the muffin tin.
Sprinkle 1/4 teaspoon of grated parmesan and a pinch of Italian Seasoning on top of each pizza roll.
Put one muffin tin at a time in the oven and bake for 15-20 minutes, until golden brown and fluffy.
