What You Need
  • 2.5 cups white cheddar cheese (shredded)
  • 1/2 Tablespoon unsalted butter
  • 1 Tablespoon cornstarch
  • 1/4 small white onion (finely chopped)
  • 1 large garlic clove (minced)
  • 1 small or 3/4 cup tomato (finely diced)
  • 1 13 oz can evaporated milk
  • 4 oz can chopped, fire-roasted green chiles
  • 1/4 teaspoon onion powder, garlic powder, cumin
  • 2 Tablespoons milk
  • 1/4 cup cilantro (finely chopped)
Mix Cheese & Cornstarch. Melt Butter
  1. In a bowl, mix cheese and cornstarch until cheese is coated.

  2. Melt butter in large saucepan on medium heat.

Slowly Add Ingredients
  1. When butter is melted, add onion and garlic. Cook until onions are clear (about 3-5 mins). Add tomato and cook for 2 mins.

  2. Stir in evaporated milk and cheese.

  3. Stir in chiles and all of your spices.

  4. Keep stirring until cheese is thoroughly melted and looks more like a dip. Then, add cilantro.

Stir in Milk to Desired Consistency
  1. If queso looks too thick, add 2 TBSP milk to thin out. Add additional 1 TBSP until you reach desired thickness.
