Chicken Parmesan Fingers
What You Need
  • 3 chicken breasts boneless and skinless preferred
  • 1/2 cup flour
  • 2 eggs
  • 1 cup panko-style breadcrumbs
  • 1/2 cup Parmesan cheese
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons butter
  • 1 cup tomato sauce
  • ½ cup mozzarella cheese shredded
  • Basil optional garnish
  1. Preheat oven to 350F
  2. Slice chicken into strips using a sharp kitchen knife.
  3. In 3 shallow bowls, place the flour in one, the eggs in the second, and the breadcrumbs and Parmesan in the third.
  4. Place half of the oil and butter in a skillet over medium heat.
  5. Dredge the chicken first in the flour, then the eggs, then finally the breadcrumb mixture.
  6. Add each chicken finger to the skillet once coated.
  7. Cooking about 6-8 chicken fingers at a time, cook 5-7 minutes on each side until cooked through and golden. Remove to a plate, add the remaining butter and oil, and cook the remaining chicken fingers.
  8. Remove all chicken fingers from the skillet and remove the skillet from heat.
  9. Wipe it down with a paper towel and add as many chicken fingers as you can in a single layer.
  10. Add a Tablespoon of tomato sauce on top of each and then a sprinkle of mozzarella.
  11. Place in the oven and cook until mozzarella is fully melted.
