HOLY MOLY Slow Cooker Chicken Fajitas
What You Need
  • 2 lbs boneless skinless chicken breast halves
  • 3/4 tsp ground coriander
  • 1 tsp salt
  • 4 cloves garlic minced
  • 2 1/2 tsp chili powder
  • 2 tsp ground cumin
  • 1 14.5 oz can petite diced tomatoes with green chilies
  • 1 red orange and green bell pepper, in slices
  • 1 large yellow onion halved and sliced
  • 1 tsp paprika
  • 3/4 tsp pepper
Instructions
  1. In a bowl, combine your chili powder, cumin, paprika, coriander, salt and pepper. Mix. First, pour your canned tomatoes into your slow cooker, then add half of your green and red peppers, as well as onions. Top with your minced garlic.

  3. Dip your chicken breasts in your seasoning mixture, covering both sides, and add to your crock pot on top of the peppers. Add remainder of peppers and onions on top of the chicken.
  4. Cook on high for 3-4 hours or low 6-8 hours
  5. Shred chicken, mix, and add to tortillas. Top with fixings like sour cream, cheese, and pico!
