Pineapple Fried Rice

Pineapple homemade fried rice recipe that will make you want to stay in rather than take out permanently. Once you have the recipe down for this vegetable fried rice, you can add small pieces of chicken, pork, or even steak for a custom recipe that is all your own.

What You Need
  • 2 tbsp oil
  • 1/2 cup chopped onion
  • 1 cup frozen peas and carrots
  • 3 tbsp soy low sodium
  • 3 cups cooked rice long grain Jasmine recommended
  • chopped green onion to taste
  • pineapple chunks
  1. Making stir fry rice is so super simple that you will want to skip the take out every time and make homemade fried rice at least once a week.

  2. Add oil, onion, frozen peas and carrots to a skillet or wok I prefer a wok because it allows you to make quite a bit of fried rice and gives you plenty of space to work in.

  3. Heat up until onion is soft and vegetables are thawed and heated through.

  4. Add eggs and mix well, heating until they are cooked, scrambling them and putting them in small pieces as you go. A spatula works fine for this.

  5. Now add your pineapple chunks and stir. This is optional. 

  6. Serve with chopped green onions if desired.
