What You Need
  • 1 Cup Butter, softened
  • 1 Cup Brown Sugar, Packed
  • 3/4 Cup Granulated Sugar
  • 2 tsp. Vanilla Extract
  • 2 Eggs
  • 1 1/4 Cups All-purpose Flour
  • 2 tsp. Ground Cinnamon
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 1/2 Cup Butterscotch Chips *Raisins or Chocolate Chips*
  • 1 Cup Walnuts, chopped (optional)
Instructions
  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl or stand mixer, cream together butter, brown sugar, granulated sugar and vanilla extract until light and fluffy.  Add eggs; beat until well blended

  3. Combine all-purpose flour, ground cinnamon, baking soda, and salt in a small mixing bowl.  Gradually add to butter mixture until well blended. 

  4. Stir in old-fashioned oats, butterscotch chips, and option walnuts.

  5. Drop by spoonfuls (or Tablespoon cookie form scoop) onto greased or parchment-lined cookie sheet.  Bake at 350 degrees for 10-12 minutes.

  6. Allow to cool on baking sheet for approximately 7 minutes before transferring to wire cooling rack.  Store in airtight container.
