Keto Mayonnaise

What You Need
  • 1 large egg
  • 2 large egg yolks
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/8 tsp. ground pepper
  • 1 cup refined avocado or olive oil, or unrefined canola oil
  1. Place all ingredients but the oil into your blender, mix well.  Once mixed, take about 2 minutes to drizzle the oil over the mixture as you blend at a medium speed.  Blend as long as you need, until it is the consistency of mayonnaise you prefer.
