What You Need
  • 2 lbs. chicken breasts
  • 1/4 tsp. cumin
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. garlic powder
  • 2 cups pico de gallo
  • 1 cup Monterey Jack cheese
Instructions
  1. Preheat oven to 375 degrees Fahrenheit.

  2. Place chicken breasts in the bottom of a 9x13 baking dish.

  3. Combine salt, pepper, garlic powder, and cumin.  Sprinkle spices over chicken breasts.

  4. Spread pico de gallo over spiced chicken breasts.

  5. Sprinkle Monterey Jack cheese over pico de gallo.

  6. Bake for 35-45 minutes, or until the thickest portion of the chicken breast is 165 degrees.

  7. Garnish with fresh chopped cilantro, if desired.
