Spray the bottom of Instant Pot with non-stick cooking spray.
Pour 1/2 cup of chicken broth into Instant Pot.
Add chicken breasts.
Cover chicken with taco seasoning.
Add black beans.
Add 1 cup of chicken broth.
Push rice into broth until fully covered.
Turn valve to sealing.
Cook on manual at high pressure for 9 minutes.
Let pressure release naturally for 11 minutes.
Turn valve to quick release.
Remove Instant Pot lid and carefully fluff rice with a fork.
Move rice aside to reach chicken breasts. Remove them and shred.
Add a scoop or two of the rice mixture to a bowl.
Add shredded chicken and other prepared toppings.
