This recipe for Instant Pot Chicken Taco Bowls will make you a superhero at suppertime. It's quick, easy, and full of flavor. A dish everyone will love.
What You Need
  • 1 1/2 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 1 15 ounce can black beans (rinsed and drained)
  • 1 15 ounce can corn (drained)
  • 1 cup salsa
  • 1 1/4 cups long grain white rice (rinsed and drained)
  1. Spray the bottom of Instant Pot with non-stick cooking spray.

  2. Pour 1/2 cup of chicken broth into Instant Pot.

  3. Add chicken breasts.

  4. Cover chicken with taco seasoning.

  5. Add black beans.

  6. Add corn.

  7. Add salsa.

  8. Add rice.

  9. Add 1 cup of chicken broth.

  10. Push rice into broth until fully covered.

  11. Turn valve to sealing. 

  12. Cook on manual at high pressure for 9 minutes.

  13. Let pressure release naturally for 11 minutes.

  14. Turn valve to quick release.

  15. Remove Instant Pot lid and carefully fluff rice with a fork.

  16. Move rice aside to reach chicken breasts. Remove them and shred.

  17. Add a scoop or two of the rice mixture to a bowl.

  18. Add shredded chicken and other prepared toppings.
