There is nothing I love more than my weekly (often bi-weekly) trip to gather up fresh fruits and veggies and serving them up in a 100 ways. This Black Bean and Corn Salsa, perfect for chips and dip OR to serve right on a tortilla or hard taco for the freshest of the fresh lunches and dinners, is one way to love your shopping even more! With prep under 10 minutes, you can also bring the life of the party with you on the go no matter if it’s a totally pre-planned party or a last-minute meet at a neighbors house.
BLACK BEAN & CORN SALSA
(slightly adapted from Hellmann’s® website)
1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise
2 Tbsp. lime juice
1/2 tsp. ground cumin
1 can (19 oz.) black beans, rinsed and drained
1 can (11 oz.) whole kernel corn, drained
1 cup grape tomatoes, diced
1 red pepper, diced
1/2 cup chopped red onion
2 Tbsp. chopped fresh cilantro
1 tsp. jalapeno pepper (optional)
DIRECTIONS
Mix your Hellmann’s® Mayo, lime juice, and cumin and then add all your ingredients and stir. The chucky vegis make it a hearty dip OR you can do like our family does and throw it right on some tortillas (add cold cooked chicken and avocado for a full meal) and take your side dish to the main dish in an instant!
