Bruschetta Dinner Salad

For the past few months, I have been focusing on helping my family eat just a little better. I know I can’t exactly retire everything in my house that isn’t perfect overnight, but I have started setting the example by limiting my own diet from excess sugars. Instead, I am focusing on choosing food, better food, for a hearty dinner and teach them that we don’t need 3 helpings or 4 dishes to make our taste buds sing and our bellies full.

For me personally, dinner salads are a must weekly. They are easy to make, most ingredients I can pick up fresh, they are colorful and pleasing to the eye, and because there are so many ideas and ways to customize, the possibilities are endless.  So this week I wanted to share with you a fantastic Bruschetta Dinner Salad that paired with a simple side of french bread, because a guilt free and delicious way to enjoy dinner in under 15 minutes!

Now we all may think of salads as a side dish but not me! I think salads are a total main course and when paired with a protein, can really be brought up from the small 1/4th corner on a plate to an entire bowl. You get your greens, your protein, your dairy and yep, even room for dessert after.
