It’s already Thanksgiving next week and while you are busy prepping your meal ideas, I know that somewhere on your list mashed potatoes will be making the cut. How you cook them though? That part is up to you! One way our family adores is to create special and unique ways of preparing family favorites.
Recipe originally inspired by Gather for Bread, we have kicked it up a notch with Loaded Mashed Potato Bombs, because let’s face it, we cannot leave out the butter, bacon, and cheese for a really good bite!
Loaded Mashed Potato Bombs Recipe
- 1 cup of bacon
- 2 cups cold mashed potatoes
- 1 cup of shredded cheddar
- 2 eggs, lightly beaten
- 1/2 chopped chive
- ½ cup dry bread crumbs
- Oil
First cook your mashed potatoes and let cool down. Once cooled, mix your mashed potatoes with 1 cup bacon and 1 cup shredded cheddar. Now shape your mixture into 1 inch balls. Roll your 1 inch balls into a slightly beaten egg mixture and then add to bread crumbs. Coat on all sides. Place your finished ball on parchment paper (laid on cookie sheet) and toss in freezer for approximately 10-15 minutes to set.
Now using your skillet or fryer, heat 1 inch of oil to 375 degrees. If you are working with a skillet over the stove, medium-high heat works best.
Add a few of your balls to the fryer at a time for approximately 3 minutes, turning until a nice crispy brown. Remove carefully and lay on a napkin or paper plate to soak up grease.
Serve immediately with our Sour Cream and Garlic Butter Dipping sauce below

Sour Cream and Garlic Butter Dipping Sauce
Our family’s newest holiday dish wouldn’t be possible without Country Crock simple recipe. Country Crock helps me make my go-to mashed potato dish extra creamy and delicious. - 2 cloves of minced or finely chopped garlic
- 3 tablespoons of Country Crock
- 2 tablespoons of flour
- 1 3/4 cup of chicken broth
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/2 cup of sour cream
- 1/3 cup of chives (optional)
Directions:
Heat the Country Crock in a large pan.
Once it’s melted, add the garlic and stir constantly until it starts to turn a light golden brown. Don’t let the garlic burn!
Add the flour, one tablespoon at a time.
Stir until it is well incorporated into the butter and garlic.
Stir in the chicken broth.
Gradually add the broth until the sauce is creamy and starts to thicken.
Add the salt and pepper, then whisk in the sour cream until everything is smooth.
Add chives before serving
