Things have been a bit quiet on the blog lately. That is due in part to the fact that we moved!
This is a big yay for us and has been so exciting. But it’s taken months and months to get to this place.
The week before we moved in it rained. The weekend we moved in it rained off and on. And the week after we moved in it rained some more.
Don’t get me wrong, I love the rain (and right now it’s so much better than snow) but boy did it have me thrown off while we were getting into our new house.
You see, in our new house we have not one, but two fireplaces. Swoon.
And between the gloomy, somewhat cold, rainy weather, and looking at said fireplaces my mind was playing tricks on me and I kept having to remind myself that it’s springtime outside right now, not fall!
I had visions of pumpkin spice dancing in my head, honestly. And I decided I needed to remedy that FAST! I needed something light and bright and fun to remind me that warm weather is on the way.
So here’s the perfect thing for me – and for you, if you need the reminder as well – Spring Nest Cookies.
These are quick, easy, and fun to put together. So cute and so crafty. Your kids will love helping you with them and they just really fit the bill to add a little bit of spring to your household, especially if you’re experiencing some April showers like we are.
So let me tell you how to make these fitting Spring Nest Cookies complete with adorable little eggs and you can whip them up as quickly as we did to start celebrating spring!
Spring Nest Cookies
Ingredients
- 12 ounces Butterscotch chips
- 2 Tbsp. creamy peanut butter
- 12 ounces dry, unsalted peanuts
- 4 ounces shoestring potato sticks
- Cadbury Mini Eggs
Spring Nest Cookies
- 12 ounces Butterscotch chips
- 2 Tbsp. creamy peanut butter
- 12 ounces dry (unsalted peanuts)
- 4 ounces shoestring potato sticks
- Cadbury Mini Eggs
- Melt butterscotch chips and peanut butter together slowly.
- Add in the potato sticks and peanuts.
- Mis all ingredients well, until fully covered.
- Use a cookie or ice cream scoop to measure mixture equally into a muffin tin.
- Add mini Cadbury eggs to the top.
- Let mixture cool and harden before serving.
