Candy Corn Fruit and Yogurt Parfait

I have a confession. Even though I’m a stay-at-home mom with all of the kids now in school …. I still sleep in.

Terrible, awful thing right?

I feel bad about it because I should totally be getting up in the morning and helping my husband get the kids off to school but the reality is, I stink at being a morning person. I tried for about 3 weeks and successfully got up at about 7am every single day but my body (and mind) was hating me for it. I’d spend all day feeling like crud and then find myself still not able to go to sleep early.

Since I really stink at being a great morning mom (and wife), I try to make up for it by making things as easy as possible for my husband. I get their bags and clothes ready for the next day and plan out an easy breakfast that my husband doesn’t have to prepare. And since it’s getting close to Halloween, I think this is a pretty fun and easy breakfast idea for kids. Even though it looks like candy corn, it’s packed with healthy goodies including pineapple, oranges and vanilla yogurt. Candy Corn Fruit & Yogurt Parfait Recipe
Course: Breakfast
What You Need
  • 1 can pineapple tidbits drained
  • 1 can mandarin oranges drained
  • 2 cups vanilla yogurt
Instructions
  1. In a small plastic cup, add a layer of pineapple and then a layer of oranges.
  2. Top it off with yogurt and refrigerate until ready to serve.
