Meringue Fail is Coconut Win!

Today should have been the day I was wowing you with my awesome meringue peppermint cookie bites.

I had even planned on breaking out the cute little frosting tips and make them into shapes. I prepped the kitchen, prepped all my little chocolates and peppermint an then…and then….and then…. NOTHING.

Nada.

My meringue wouldn’t……meringue.

No fluff, no white, no soft billowy peaks of light as a feather cookies. TOTAL LETDOWN.

The sugar and egg whites didn’t get the message they were supposed to do anything. After about 25 minutes on high in the mixer, I gave up. So staring into the bowl I didn’t want to waste all that sugar and egg and vanilla. Instead I just added my own ingredients in a total guess and made some yummy, but sugary, but yummy coconut cookies.

So here you go….my very own recipe.

Trishas Crazy Coconuty Sugar Cookies

(how is that for an ultra creative title)

  • 3 egg whites
  • 1 tsp vanilla
  • 1/8 tsp cream of tartar
  • 1/8 tsp salt (kosher)
  • 3/4 cup fine sugar
  • 1 tbsp powdered sugar
  • 4 tbsp flour
  •  1 1/3 cup coconut

1) Mix your egg whites, vanilla, cream of tartar, salt, and sugar on high in the mixer till sugar is dissolved. This is the point perhaps meringue should form. It probably will for you. It didn’t for me. Don’t mix that far. Just a few minutes!

2) Stir in flour and coconut by hand and mix well.

3) Put your dough on a parchment paper and put on cookie sheet. Stick in 325 degree oven for approx 20 minutes. I then put it on broil for 2 minutes to crisp the little bit of coconut on top. Watch it. Broil can burn pretty quick.

Remember, this is not a traditional cookie recipe. They were really good, but they were formed from a failed recipe, so the sugar amount is pretty high. I got two thumbs up from the kids but my spouse acted like he was going into a diabetic coma.

    That didn’t end as a disappointment but something that you can be proud of. This is a great recipe and it is just simple so everyone can try it. You are really creative when it comes to baking.

    That’s how the best recipes are made! That’s how I came up with my chocolate trifle cupcakes. I had my chocolate cake fall apart but it was so delicious I couldn’t just toss it. I’m coconut obsessed lately so can’t wait to try this!
