Easy Homemade OREO Ice Cream Sandwiches for Valentine’s Day
To get started with this kid-friendly Valentine’s Day project, you’ll need to grab a tub of your favorite ice cream.
For ours, we used cookies n cream ice cream. Let it sit at room temperature for 20 minutes or so and you’ll find that it’s easier to spread.
On a jelly roll pan, cover the bottom with a sheet of freezer paper (or wax paper), spread the ice cream and cover it with another sheet of freezer or wax paper.
Use a rolling pin to smooth it into an even layer, about 1/2 an inch thick. Now pop that tray into the freezer for at least an hour so it firms back up.
You’ll also need a bag of OREO cookies. Just twist each cookie in half and set them aside until you’re ready to make your ice cream sandwiches.
Find a cookie cutter (or other round object like a shot glass) to cut circles in the ice cream that are close to the same size of the OREO cookies.
Drop the ice cream discs onto half of the cookies.
Top the ice cream with the other half of the cookies. Now, you can go ahead and munch these up now, freeze them for later or …..
… roll the ice cream sandwiches in your favorite holiday colored sprinkles.
They will try to melt fairly quickly so I would suggest you eat them right away or get them straight into the freezer to enjoy later.
