There is nothing that brings more comfort to you than a bowl of chicken noodle soup. It’s incredibly soothing and brings me back to my childhood. Chicken noodle is also so easy to make and is a homemade recipe that can last a few days, making for left overs that are perfect to warm up on cold months like this one.

Prior to the instant pot I had to break up  my cooking and make sure the chicken was done and then sit in a slow cooker all day, but now thanks to pressure cooking, this is a one pot quick meal that your entire family will appreciate.

Homemade Chicken Noodle Soup Recipe

Before you get started, make sure you grab your chicken noodle ingredients below. I encourage you to use fresh pasta as it just tastes so much more homemade than boxed. You can typically find it in a cold aisle. You can also go all out and make your own pasta, but that would completely negate the fact that this is a quick recipe, am I right?

Ingredients:

  • 2 tablespoons oil
  • 1 lb chicken breast, cubed
  • 1 tablespoon minced garlic
  • 1/4 cup diced onions
  • salt and pepper
  • 1/2 cup matchstick carrots
  • 1/2 cup diced celery
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 32 ounces (4 cups) chicken broth
  • 4.5 oz, fresh fettuccine pasta, cut into 2″ pieces

Also need:

Instant Pot or Pressure Cooker

Chicken Noodle Soup Recipe

Place oil, chicken, garlic and onion into the instant pot.

Saute the chicken until brown on all sides and onions are translucent.

Season with salt and pepper.

Add carrots, celery and spices to instant pot.

Add chicken broth and stir well.

Close instant pot and close the quick release valve.

Set instant pot to manual, high pressure for 5 minutes.

Once cooking cycle is complete, naturally release pressure for 3 minutes.

Then open the quick release valve to release the additional steam.

Open pot and stir in pasta.

Let set five minutes, stirring occasionally.

  1. We made this tonight and it was quite good – we both thought it needed a little salt. Super easy and very quick from start to table. Except for the fresh pasta we had everything on hand so that was a big plus. We are new to Instant Pot cooking and so far loving it.
