When it comes to dinner recipes, there are two things I love: quick and easy. This Lemon Piccata chicken fingers recipe falls under both, making it an under 30 meal that makes mom and family both happy. Personally I have a thing for capers and lemon.

I feel like they make pasta, chicken and even steak worth eating. For the life of me I cant figure out why my husbands hate those little balls of deliciousness, but when mixed in a perfect creamy piccata sauce, he doesn’t even notice.

Its doused in the perfect balance of lemon and topped with fresh herbs or a veggie of your choice (I say asparagus or spinach works perfect for this) making it a restaurant quality meal without the hassle of leaving your house.

  • 3 chicken breasts, boneless and skinless preferred
  • 2 Tablespoons flour
  • 2 Tablespoons Parmesan cheese
  • Salt and pepper, to taste

How to make Lemon Piccata Chicken Fingers

Cut the chicken into strips with a sharp kitchen knife.

Place 1 Tablespoon of the oil and 1 Tablespoon of the butter in a skillet over medium heat.
In a shallow bowl, combine the flour and Parmesan.

Season the chicken with salt and pepper and dip in the flour-cheese mixture.
Add the chicken to the skillet and sear on both sides until golden brown and cooked through, about 5-7 minutes.

Remove chicken to a plate and add remaining butter to the skillet.
Once the butter is melted, add the garlic, and 30 seconds later add the broth, capers, Parmesan and cream. Stir occasionally until you bring it to a boil, then whisk in the cornstarch and reduce to low heat to simmer.

Add the lemon juice and then 1 minute later add the chicken back to the skillet and serve.

  • 11/2 cups chicken broth
  • ½ cup heavy cream
  • 1/4 cup Parmesan cheese
  • 2 Tablespoons capers
  • 1 Tablespoon cornstarch
  • Lemon juice (to taste)
