Chicken Parmesan Fingers

- 3 chicken breasts, boneless and skinless preferred
- 1/2 cup flour
- 2 eggs
- 1 cup panko-style breadcrumbs
- 1/2 cup Parmesan cheese
- 2 Tablespoons extra virgin olive oil
- 2 Tablespoons butter
- 1 cup tomato sauce
- ½ cup mozzarella cheese, shredded
- Basil, optional garnish
INSTRUCTIONS for Chicken Parmesan Fingers Recipe
Preheat oven to 350F
Slice chicken into strips using a sharp kitchen knife.
In 3 shallow bowls, place the flour in one, the eggs in the second, and the breadcrumbs and Parmesan in the third.
Place half of the oil and butter in a skillet over medium heat.
Dredge the chicken first in the flour, then the eggs, then finally the breadcrumb mixture.
Add each chicken finger to the skillet once coated.
Cooking about 6-8 chicken fingers at a time, cook 5-7 minutes on each side until cooked through and golden. Remove to a plate, add the remaining butter and oil, and cook the remaining chicken fingers.
Remove all chicken fingers from the skillet and remove the skillet from heat.
Wipe it down with a paper towel and add as many chicken fingers as you can in a single layer.
Add a Tablespoon of tomato sauce on top of each and then a sprinkle of mozzarella.
Place in the oven and cook until mozzarella is fully melted.
