Sautéed Cranberry Orange Spiced Green Beans

Every new year is time for a new start and part of that for our family is making sure we are incorporating fresh food as often as possible. Thankfully we have a local farmers market mere minutes from my house and combining our purchases there with some of our other favorite ingredients means it’s easier to keep our resolution.

GET A CAST IRON PAN

Before you get started, I highly recommend using a cast iron pan. If you do not have one, its a must when it comes to cooking. I cook almost 100% in cast iron, which makes the food taste better and can easily be put in the oven to finish meats. This is the one I use:

Sautéed Cranberry Orange Spiced Green Beans

Directions:

MELT Country Crock® Spread in large nonstick skillet over medium heat and cook green beans and shallot, stirring frequently, until crisp and tender, about 8 minutes.

STIR in orange juice, cranberries and cinnamon and cook 1 minute.

Season, if desired, with salt and pepper to taste.

SPOON vegetables into serving bowl and, if desired, sprinkle with toasted almonds.

  • 3 Tbsp. Country Crock® Spread
  • 1 lb. green beans (trimmed)
  • 1 large shallot or small onion
  • 1/4 cup orange juice
  • 1/4 cup dried cranberries
  • 1/4 tsp. ground cinnamon
  1. MELT Country Crock® Spread in large nonstick skillet over medium heat and cook green beans and shallot, stirring frequently, until crisp and tender, about 8 minutes.
  2. STIR in orange juice, cranberries and cinnamon and cook 1 minute. Season, if desired, with salt and pepper to taste.
  3. SPOON vegetables into serving bowl and, if desired, sprinkle with toasted almonds.
