Bruschetta Recipe with Olives, Vinegar, and Artisan Bread

I would say overall I am a mom that cares about what my family eats, but I am one of the lucky ones. I get to stay home and for the most part, start dinner prior to my spouse coming home so everyone can sit down together for a home cooked meal.

But I also realize that there are many households that do not have that privilege and time is of the essence…and lets face it, when it comes to spending time with your family versus three hours of cooking, I would much rather be sitting down and asking how my kids days went over slaving on a hot stove. Sometimes I cook out of a bag, sometimes out of a box, sometimes frozen (being honest here) but bread is the one thing I always have on hand fresh and ready to go for a homemade meal.

Perfect for an appetizer, lunch, or dinner, Bruschetta is easily one of my households favorite add on’s. I personally take the lead from one of my favorite Italian restaurants, Carrabba’s, and change up a recipe that I love there. Do not be intimidated on this long list of ingredients, its actually a super simple meal and you can pile high with cooked up meats to make it a meal on its own. Worth every last chop!

Easy Bruschetta Recipe

  • 4 medium tomatoes
  • 1/2cup red onion
  • 1/4cup Kalamata olives, halved
  • 2 to 3 large basil leaves, chopped medium
  • 1/2cup extra virgin olive oil
  • 1/4cup red wine vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon dry oregano
  • 3/4teaspoon fresh ground pepper
  • Loaf of artisan bread
  • Extra virgin olive oil
I personally alter my Bruschetta for our smaller family and my recipe is:
  • 1 large beefsteak tomato cut in bite sized cubes
  • 1/4 cup red onion (optional) cut in cubes
  • 1 cup of fresh mozzarella cut in bite sized cubes
  • 2 to 3 large basil leaves, chopped medium
  • 1/4cup balsamic vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon dry oregano
  • 3/4teaspoon fresh ground pepper
  • french bread
  • Extra virgin olive oil

How to Make Bruschetta

Making this bruschetta recipe is so easy! Combine the tomato, mozzarella, basil, balsamic, salt, Oregano, pepper and optional red onion into a bowl and mix.

Cut a loaf of french bread into 1/2 inch slices and brush on a mixture of EVOO and Garlic on both sides and place in oven on 400 for 4 min each side so it’s crispy and toasty.
Once the bread is done, put mixture in bowl and serve along side bread so everyone can scoop how much they want individually.
Pile it high!

  1. I always have some frozen meals stocked in my freezer for nights when cooking just ain’t going to happen. My daughter loves the fettuccine too.

  2. We LOVE Michelina’s! There are a few reasons we eat these….
    #1 they are DELICIOUS!
    #2 they are PERFECT for our budget
    #3. fast & easy!

    My husband just started back in the truck driving industry so I really only cook on the weekends when he home. Michelina’s is perfectly portioned for myself and my 7 yr. old. We eat them almost every day during the week. We are also in a temporary place (living) and we do not have an oven – only 2 burners and a microwave. Michelina’s is an easy solution for that situation. Don’t get me wrong, I have learned to cook some mean meals with just 2 burners, a microwave and a crock pot (occasionally used) – but we all know microwave is the fastest & easiest way!

    I am going to have to look into some ideas for “sides” – never thought to do that! ha!

    The ONLY complaint I have about Michelina’s is there is not enough Broccoli in the Lasagna Alfredo (my personal fave!)
