Easy After School Slider Recipes

This post is in partnership with Farm Rich

Last night we hauled the whole family to meet Charlottes new teacher. Heading into the 5th grade is a big deal! She now begins switching classes and I have to say, my first real memories of education and growing up started in 5th grade. The other great thing that happened is that the bus schedule finally changed. She was having to do an HOUR ride to school and an HOUR ride home. That’s been shortened by at least 30 minutes on a new route and she is one of the last picked up, so for her, even shorter!

The problem with the bus ride last year wasn’t that she didn’t want to be on the bus. She loved her friends and she did not want me to take her to school. The problem was that she was developing headaches from the heat and the hunger that comes with a full day of  spent energy at school. And while her ride is thankfully shorter this year, I still expect her to show up at the front door, walk in the house and yell “I am hungry!” before her bag even hits the floor.

And I will be ready for it!

Thankfully when it comes to after school eats, there are plenty of options out there and Farm Rich’s Real-Life Good reminds us that a delicious and hearty snack, right before settling into homework, can easily be accomplished without much work.

easy snacking

1) First cook up your Mozzarella sticks and turkey meatballs. While they are cooking, you can warm up some tomato sauce. I like to add freshly sauted onions and garlic to mine. Trust me, it only takes about 2 minutes! Once your food is done baking, add Italian rolls to the oven and broil for just about 30 seconds till toasted nicely.

2) Cut your meatballs in half and lay flat on your Italian rolls. Now here is the fun part- add your cheesy melty Mozzarella stick in place of a regular slice of cheese. It brings a nice crunch and rich flavor of real cheese. Trust me!

Then cover in your sauce and serve.
