Fairy Ice Cream Cookie Sandwiches

Every week around our house is a new adventure. And while the ride of being a parent is wonderful, the fact is we are always, ALWAYS busy. Monday through Friday is a balance of work, household chores, homework daily, hauling the kids back and forth to school, sports, friends homes. I mean I HEAR that some people get to sit on the couch and watch TV or that whole “bon bon” eating thing, but I have yet to experience it.

The Haas house has to set aside time to have INTENTIONAL fun. And we do- every week. We eat family dinners, we pick movies in the month to rent or go see, we hit parks and the pool, but there is nothing more fun than spending time with the kids in the kitchen. No matter if you are a busy family or a relaxed family, getting together to bake cookies is one of the most fun and memorable moments you will have with your kids. Who doesn’t have a story baking with mom, or eating warm cookies right out of the oven? And if for some reason you don’t have that history with mom, dad, or grandma, you can still make a memory that will last your kids for a lifetime by breaking out the apron and getting your cookie on.

Make it Yours cookie

Start with Country Crock’s Make it Yours cookie – a perfect blank canvas to dream up new creations with your kids.

  • 1 cup Country Crock® Spreadable Sticks or Tub
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. baking soda
  • Your choice of mix-ins

Directions:

Preheat oven to 375°. Mix Country Crock® Spread, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)

Drop dough by rounded tablespoonfuls on ungreased baking sheets 3-inches apart.

Bake 10 to 12 minutes until edges are lightly golden.

Cool 1 minute on wire rack; remove from sheets and cool completely.
