Admittedly I love all things Caprese.
You put mozzarella, basil and tomatoes on bread I’m in.
You put it on a plate…I’m in.
You put it on a bagel…yet again, I’m in.
And while I am always trying to Caprese the heck out of something for a side dish, the truth is, it makes a perfectly delicious (and beautiful) dinner as well. This One pot Caprese pasta will leave you full yet begging for more and although is made meatless in the recipe below, you can easily make it more hearty by adding some chicken and balsamic.
Maybe that’s for the leftovers. Oooh, second dinner!

One Pan Caprese pasta
One Pan Caprese pasta (No Draining!) , enjoy delicious fresh basil, mozzarella, and tomatoes in this meal that is perfect for dinner or lunch and provides incredible left overs
- 1/2 cup diced white onion
- 2 tbsp olive oil
- 1 box bowtie pasta
- 1 package of grape tomatoes, sliced in half
- 6 whole basil leaves
- 2 cloves minced garlic
- 2 1/2 cups water
- 1/2 tsp sea salt
- 1 1/2 cups fresh diced Mozzarella
- 2 tablespoons Balsamic Vinegar
Directions:
Sauté onions and garlic with olive oil over medium heat and cook until soft (about 2-3 minutes)
Add pasta, sliced tomatoes, 4 basil leaves, garlic, water, salt and pepper to the pan and stir to combine.
Bring to a boil.
Continue to cook over medium heat, stirring frequently, until pasta is cooked (about 10 minutes)
Top with diced mozzarella, cover pan and cook on low until cheese is melted
Sprinkle with Balsamic vinegar and remaining basil for garnish.
