Ingredients
- 2.5 cups white cheddar cheese (shredded)
- 1/2 Tablespoon unsalted butter
- 1 Tablespoon cornstarch
- 1/4 small white onion (finely chopped)
- 1 garlic clove (minced)
- 1 small or 3/4 cup tomato (finely diced)
- 1 13oz can evaporated milk
- 4oz can chopped fire-roasted green chiles
- 1/4 teaspoon onion powder
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 2 Tablespoons milk
- 1/4 cup cilantro (finely chopped)
This Authentic Mexican Queso Blanco recipe serves 10 people. Double or half according to your family or guest size!
Queso Blanco Instructions
Before you start cooking your queso, you’ll need to gather your equipment. For this recipe, you’ll need:
- Large saucepan
- Mixing bowl
- Cooking spoon for stirring
- Serving dish or bowl
1.) Mix Cheese & Cornstarch. Melt Butter
In a mixing bowl, mix cheese and cornstarch together until cheese is thoroughly coated.
Melt butter in a large saucepan over medium heat.
2.) Slowly Add Ingredients
When the butter is melted, add chopped onion and minced garlic. Cook until the onions are translucent (about 3 to 5 minutes). Then, add tomato and cook for an additional 2 minutes.
Stir in evaporated milk and cheese, then stir in chiles and all of your spices. Keep stirring until the cheese melts completely and it looks more like a dip. Finally, add cilantro.
3.) Stir in Milk to Desired Consistency
If queso looks too thick, stir in 2 Tablespoons of milk to thin out. Add 1 additional Tablespoon until you reach your desired thickness.
