- 3 pounds of sweet potatoes (peeled, washed, and cut into small cubes)
- 1/3 cup softened butter
- 1/2 teaspoon vanilla extract (pure vanilla tastes best)
- 1/2 cup packed brown sugar
- 3/4 cup chopped pecans (optional)
- 1/4 teaspoon cinnamon
- Salt and pepper (to taste)
- 2 cups of mini marshmallows

Sweet Potato Casserole Instructions
To get started on your Sweet Potato Casserole, first, gather your tools. You will need:
- 9 x 13 casserole dish or deep pan
- Non-stick cooking spray
- Large pot
- Colander
- Large bowl
- Rubber spatula or spoon
1.) Prep & Boil Potatoes
After you’ve cut your potatoes into cubes, preheat the oven to 375 degrees Fahrenheit and grease your 9 x 13 dish or pan. Fill a large pot with water about halfway, add cubed potatoes, and bring to a boil. Allow the potatoes to boil for 15 minutes, until fork-tender. Drain the potatoes using your colander.
2.) Mash Potatoes & Mix Ingredients
In a large bowl, add your sweet potatoes, brown sugar, butter, cinnamon, salt, pepper, and vanilla. Mash the potatoes and mix the ingredients until thoroughly combined. If using pecans, fold in 1/2 of the pecans.
3.) Spread in Casserole Dish & Bake
Using a rubber spatula, spread the mixture into your greased dish evenly. Layer the top of the casserole with marshmallows and the remaining pecans (if using). Bake for 25 minutes in the center of the oven, until marshmallows are golden brown and bubbly.
