Forget getting your kids to eat their veggies, getting us as parents to eat our own veggies can be hard enough. I mean have you tasted an Oreo? Right! But veggies are amazing and there are so many options to make gorgeous and unique salads that during “rainbow” blog month, I wanted to make sure I put up this beautiful way to TASTE the rainbow with Rainbow Chef Salad.
PRO TIP:
Before you get started, you need to do some prep. Salad is one of my very favorite things to eat but cutting everything up is among some of the worst kitchen chores for me- especially those pretty purple onions. Make sure you have a good quality chopper like this one. It not only makes it QUICK but also keeps the excess of onion smell off your hands and out of your life – while still allowing you to enjoy!

Rainbow Chef Salad
- Romaine Lettuce, chopped
- Hard Boiled Eggs, crumbled
- Green peppers, diced
- Grape tomatoes, sliced
- Cooked chicken, diced (optional)
- Orange peppers, diced
- Red onions, diced
Directions:
Fill a salad bowl (large or small, depending on occasion) with chopped romaine lettuce
Place remaining ingredients in rainbow order
Top with your favorite dressing and enjoy!
You cannot deny how gorgeous, tasty and yep, I’m gonna say it again, GORGEOUS this is.
