Enjoy Delicious Rainbow Veggie Pizza to brighten up and enjoy some of seasonal veggies!
It’s no secret that my kids have the palette of like…a worm. I am pretty sure they have only three food groups: Chicken. Fries. Mac N Cheese. And my daughter is lactose intolerant. And admittedly the past, oh, forever, I have been a craptastic parent that just fed them what they wanted (within a normal realm) to just keep the night moving.
Yep, for about 10 years now I have been making two dinners every night. One for the parents and one for the kids. I know what it sounds like and I know what it looks like and trust me, it’s hell on dishes and the grocery bill. For some reason, my kids don’t like flavor…or color…or texture.
They are foolish, foolish creatures of habit. But I do….oh yes I do.
I think nature has provided us with the most beautiful and delicious fruits and veggies to eat. Now I share that whole tidbit above with you because, in theory, Rainbow Veggie Pizza is a kid friendly meal. I’d like to think my former child self would have eaten an entire NAAN flatbread on my own covered in the most gorgeous veggies. I def know the adult version of me can! So whether you are here because you are looking for something (mostly ) healthy to put on your plate tonight or like me and trying to force ANYTHING down your child’s throat that isn’t some baked chicken and a side of applesauce, welcome.
First…rainbows. RAINBOWS. This entire month I have been focused on rainbow foods and crafts. I put links to them at the end of the post if you have a chance to check them out… they are perfection too. Rainbow food is my own personal take on St. Patrick’s Day. My husband said something along the lines of that being way off base, but seriously I cannot blog green and shamrocks for 28 days. I would be offering up broccoli with a side of asparagus. Instead, we are going to go with the “pot of gold at the end of a rainbow” theory. Plus rainbows are awesome in all ways and look especially awesome on a plate for dinner!

Rainbow Veggie Pizza
You can make this gorgeous perfection loaded up with fresh veggies and flawless (and guilt free) for lunch or dinner. Of course this one was made with a sprinkling of veggies to look like a rainbow, but you can just as easily scatter up the toppings for a change in every bite.

Rainbow Veggie Flatbread Pizza
- Naan bread
(2 pieces)
- 1 cup pizza sauce
- 1 cup mozzarella cheese
- Green peppers
, diced
- Grape tomatoes
, sliced
- Cooked chicken, diced (optional)
- Orange peppers, diced
- Yellow peppers, diced
- Red onions, diced
- pizza stone
Directions:
Preheat oven to 400
Spread pizza sauce on naan bread and cover with mozzarella cheese
Layer veggies in rainbow order on flatbread and add to stone
Bake at 400 for 10-15 minutes
Let cool for 5 minutes before cutting
Cut into slices and serve warm.
And when you cut it, you get a little bit of each vegi on your pizza. YUM!!
