Caprese Salad Recipe
Mini pie crusts make these the perfect grab and go snack, so make sure you make plenty to pile high! There can never be too many ways to eat cheese and veggies. This recipe pairs perfectly with Olive Garden Chicken Parmesan (copycat) and a side of Bruschetta! Plus, if you are in a really adventurous homemade mood, make some salad and toss with Copycat Olive Garden dressing. YUM!
Ingredients for Mini Caprese
- 10 Ready made mini pie crusts
- 1/2 Cup cherry tomatoes
- 1/2 Cup mozzarella cheese
- 1/8 Cup chopped chives
- 1 Tsp salt
- 1 Tsp ground black pepper
- 2 Tbsps olive oil
How to make Caprese Salad
Dice cherry tomatoes.
Break up mozzarella cheese into small pieces.
Add the chopped chives, salt and pepper in a small bowl.
In another bowl add the oil.
Dip cheese into olive oil and fully coat.
Transfer cheese to the seasoning and roll around until fully covered.
Place the cheese into each crust.
Garnish with tomatoes and extra chives on top.
Serve and enjoy.
Tip
Garnish with a couple drops of extra virgin olive oil on top to add a true olive taste without the olives.
